We say in French: L’avenir appartient à ceux qui se lèvent tôt (the future belongs to early risers) and if this is true, Vietnam will have a very bright future. If you wake up early in Ho Chi Minh, you could always do like the locals and head to Pho Hoa Pasteur for a good morning pho.
Pho Hoa Pasteur is an institution located on the far end of Pasteur street. If you reside in the dead center of Ho Chi Minh, you might want to take a taxi there.
We got there super early and sat at the first table near the kitchen where a team of ladies are preparing the meat and the noodles.
Being a popular place, they have a menu in English.
We ordered the pho with the raw beef and the cooked brisket.
The pho at Pho Hoa is classic textbook pho with a great tasting soup, nice noodles and good meat. We didn’t eat any of the fried food which is laid on the table because we tried to keep our breakfast light.
We started and ended our trip to Vietnam with this simple breakfast. If you go early, you can see a lot of locals. I walked in front of the shop around lunch time and it’s a very busy place.
I have tried the very popular Pho 24 and Pho 2000 and they can’t compete with Pho Hoa.
